Ordering Live Lobsters & NOT Get Ripped Off

If you have ever thought about ordering live lobster to cook at home, here are some particulars you’ll want to know before doing so.

If your ordering lobster tails, and your a fan of cold water lobsters over warm water lobster. Although more expensive, you’re more likely to have success with cold water tails. The problem is when buying lobster tails, it’s sometimes hard to tell the difference unless marked or you ask.

When you order live lobsters, it’s much easier. Cold water lobsters have large claws in the front where warm water lobsters, also called “spiny lobster” or “rock lobsters” do not.

You may also notice colder water lobsters have whiter meat and are often thought of as more tender because the grow more slowly in colder waters. Because of their exposure to warmer water, spiny lobsters tend to grow larger.

The Nova Scotia fishing fleets heads out at sunrise everyday, each boat hauls 275 traps before returning to the wharf with their daily catch of lobster.The lobsters are then placed in the holding tanks at the pound. The lobsters are cooked fresh daily upon your order and placed in a large walk in cooler to reduce the core temperature before packaging and preparing for delivery. Our live lobster stay in our holding tank and are packed just prior to shipping.

Hard Shell Lobster:

The live Atlantic Canada lobster you receive will be hard shelled. Hard shells are stonger, healthier, travel better and contain more meat than a soft shell lobster. Hard-shell meat flavor and texture is preferred. Always demand hard shell when buying live lobster delivered..

Handling Live Lobster:

Live lobsters need to be kept alive until cooked to prevent deterioration. They should be cooked the same day they're delivered.

How to Steam Lobster:

Steaming is a more gentle process of cooking the meat and it preserves more flavor and tenderness. Steaming is also more forgiving on the chef since it is harder to overcook in a steam pot. For true lobster lovers, steaming is the way to go. So let's get started cooking.
